I too had been wondering what these obscure cupboards where used for. They are accessible from both the hallways and the patient rooms; The only conclusion I could come to was that the metal brackets may have been used to hold boxes of sorts in place, to be heated or cooled. I'm sure they must have been used often to have been accessible from both the rooms and the halls, to enable a nurse to remove it's contents even without entering the room.
