I'm pretty sure that the labels over the valves are zone markers describing what section(s) of the building each zone controls...Each zone has a seperate shutoff for maintenance in a given area without requiring the entire building's water (steam?) to be shut off....IMO!
Looks like Oak, definitely a door at one point swung from those hinges, not bent wood, though, the grain is running vertically all the way across the opening....Old world craftmanship, Gotta love it!
